Quick recipe of the week: Thai Patties

IPA's Ana Kerekgyarto follows our nutrition guidelines to produce her series of adapted recipes ideal for the polo player all year round.
Ingredients (serves about 4):
500 g lean pork or beef, minced
Bunch of finely chopped spring onions
Small handful of chopped, fresh coriander
3 tbsp of Thai red curry paste
2 gloves of garlic, finely chopped
Fish sauce to taste (do not add salt)
1 egg white
Oil for cooking
2 tbsp of sesame seeds
Sweet chilli sauce and lime to serve it with
Preparation
Mix the mince, spring onions, egg white coriander, Thai red curry paste and fish sauce in a bowl or in a food processor to get a fine paste. Shape small patties (about 12 pieces), roll them in the sesame seeds and brush them lightly with oil. Pan-fry patties for 5 minutes each side until browned. Serve patties with sweet chilli sauce, lime and stir-fried vegetables or salad.
